Ingredients:

  • 1 box (15.25 oz / 432g) Standard Cake Mix
  • 4 large eggs
  • ½ cup (113g) Vegetable oil
  • ½ cup (120g) Full-fat sour cream
  • 1 package (3.4 oz / 96g) Instant pudding mix

Instructions:

  1. Preheat your oven to 350°F (175°C). Grease your baking pan and line the bottom with parchment paper. Ensure your eggs and sour cream are at room temperature.
  2. In a large bowl, combine the cake mix and the instant pudding powder.
  3. Add the oil, sour cream, and all four eggs to the bowl.
  4. Beat on medium speed for about 2 minutes until the batter reaches a smooth, velvet-like consistency with no dry pockets of flour.
  5. Pour the batter into the prepared pan and smooth the top with a spatula.
  6. Bake for 28–32 minutes. Test for doneness by inserting a toothpick into the center; it should come out clean or with a few moist crumbs attached.
