Ingredients:
- 2 cups (60g) fresh baby spinach, finely chopped
- 1/2 cup (75g) feta cheese, crumbled
- 1/4 cup (25g) grated Parmesan cheese
- 1 large (50g) egg, beaten
- 3 tbsp (25g) all-purpose flour
- 1 tbsp (15ml) olive oil
- 1/2 tsp (2g) garlic powder
- 1/2 tsp (1g) dried oregano
- 1/4 tsp (1.5g) salt
- 1/4 tsp (1g) black pepper
Instructions:
- Place the chopped spinach in a kitchen towel and wring it out over the sink with maximum pressure until no more liquid drops.
- In a medium bowl, whisk together the egg and olive oil, then stir in the squeezed spinach, crumbled feta, and Parmesan.
- Fold in the flour, garlic powder, oregano, salt, and pepper, mixing until a thick, slightly tacky paste forms.
- Preheat the oven to 375°F (190°C) and line a heavy-duty rimmed baking sheet with parchment paper.
- Drop rounded tablespoons of the mixture onto the tray, spacing them 2 inches apart, and use the back of the spoon to slightly flatten them into discs.
- Bake for 12–15 minutes until the edges turn a deep mahogany brown and the centers are no longer wet.
- Remove from the oven and let the crisps sit on the pan for 5 minutes to set before serving.
