Ingredients:

  • 2 cups (60g) fresh baby spinach, finely chopped
  • 1/2 cup (75g) feta cheese, crumbled
  • 1/4 cup (25g) grated Parmesan cheese
  • 1 large (50g) egg, beaten
  • 3 tbsp (25g) all-purpose flour
  • 1 tbsp (15ml) olive oil
  • 1/2 tsp (2g) garlic powder
  • 1/2 tsp (1g) dried oregano
  • 1/4 tsp (1.5g) salt
  • 1/4 tsp (1g) black pepper

Instructions:

  1. Place the chopped spinach in a kitchen towel and wring it out over the sink with maximum pressure until no more liquid drops.
  2. In a medium bowl, whisk together the egg and olive oil, then stir in the squeezed spinach, crumbled feta, and Parmesan.
  3. Fold in the flour, garlic powder, oregano, salt, and pepper, mixing until a thick, slightly tacky paste forms.
  4. Preheat the oven to 375°F (190°C) and line a heavy-duty rimmed baking sheet with parchment paper.
  5. Drop rounded tablespoons of the mixture onto the tray, spacing them 2 inches apart, and use the back of the spoon to slightly flatten them into discs.
  6. Bake for 12–15 minutes until the edges turn a deep mahogany brown and the centers are no longer wet.
  7. Remove from the oven and let the crisps sit on the pan for 5 minutes to set before serving.
