Ingredients:

  • 1 box (15.25 oz / 432g) White Cake Mix
  • 3 large eggs
  • 1/2 cup (120ml) Unsweetened applesauce
  • 1/4 cup (60ml) Vegetable oil
  • 1 cup (240ml) Water
  • 1 package (3 oz / 85g) Strawberry-flavored gelatin
  • 1 cup (240ml) Boiling water
  • 1 cup (240ml) Cold water
  • 2 cups (480ml) Heavy whipping cream
  • 3 tbsp (36g) Powdered sugar
  • 1 tsp (5ml) Vanilla extract
  • 1 cup (150g) Fresh strawberries, sliced

Instructions:

  1. Preheat your oven to 350°F (175°C) and grease your 9x13 inch pan.
  2. In a large bowl, combine cake mix, eggs, applesauce, oil, and water. Beat on medium speed for 2 minutes until the batter is smooth and pale.
  3. Pour into the pan and bake for 28-32 minutes until a toothpick inserted in the center comes out clean.
  4. Allow the cake to cool for 15 minutes.
  5. Using the handle of a wooden spoon or a skewer, poke holes across the entire surface of the cake, spaced about 1 inch (2.5cm) apart, going about halfway through the cake.
  6. In a heat-proof bowl, dissolve the strawberry gelatin in boiling water, then stir in the cold water.
  7. Pour the gelatin mixture slowly over the cake, ensuring it fills the holes.
  8. Refrigerate for 4 hours until set.
  9. Whip heavy cream, powdered sugar, and vanilla extract until stiff peaks form, then spread over the chilled cake and garnish with sliced strawberries.
