Ingredients:
- 1 box (15.25 oz / 432g) White Cake Mix
- 3 large eggs
- 1/2 cup (120ml) Unsweetened applesauce
- 1/4 cup (60ml) Vegetable oil
- 1 cup (240ml) Water
- 1 package (3 oz / 85g) Strawberry-flavored gelatin
- 1 cup (240ml) Boiling water
- 1 cup (240ml) Cold water
- 2 cups (480ml) Heavy whipping cream
- 3 tbsp (36g) Powdered sugar
- 1 tsp (5ml) Vanilla extract
- 1 cup (150g) Fresh strawberries, sliced
Instructions:
- Preheat your oven to 350°F (175°C) and grease your 9x13 inch pan.
- In a large bowl, combine cake mix, eggs, applesauce, oil, and water. Beat on medium speed for 2 minutes until the batter is smooth and pale.
- Pour into the pan and bake for 28-32 minutes until a toothpick inserted in the center comes out clean.
- Allow the cake to cool for 15 minutes.
- Using the handle of a wooden spoon or a skewer, poke holes across the entire surface of the cake, spaced about 1 inch (2.5cm) apart, going about halfway through the cake.
- In a heat-proof bowl, dissolve the strawberry gelatin in boiling water, then stir in the cold water.
- Pour the gelatin mixture slowly over the cake, ensuring it fills the holes.
- Refrigerate for 4 hours until set.
- Whip heavy cream, powdered sugar, and vanilla extract until stiff peaks form, then spread over the chilled cake and garnish with sliced strawberries.
