Ingredients:

  • large overripe bananas
  • unsalted butter, melted
  • canola oil
  • dark brown sugar, packed
  • large egg, room temperature
  • pure vanilla extract
  • full-fat sour cream
  • all-purpose flour
  • baking soda
  • salt
  • semi-sweet chocolate chips

Instructions:

  1. Preheat oven to 350°F (175°C) and grease a 9x5 inch loaf pan or line with parchment paper.
  2. In a large mixing bowl, mash the 3 large bananas with a fork until mostly liquid. Whisk in the melted butter, oil, dark brown sugar, egg, vanilla extract, and sour cream until the mixture is glossy.
  3. Sift the flour, baking soda, and salt directly into the wet ingredients. Use a spatula to gently fold the mixture until just combined and no white streaks remain.
  4. Gently fold in 3/4 cup of the chocolate chips. Pour the batter into the prepared loaf pan and sprinkle the remaining 1/4 cup of chocolate chips on top.
  5. Bake for 55–65 minutes. Test with a toothpick; it should come out with a few moist crumbs but no wet batter. Let cool before slicing.
