Ingredients:
- large overripe bananas
- unsalted butter, melted
- canola oil
- dark brown sugar, packed
- large egg, room temperature
- pure vanilla extract
- full-fat sour cream
- all-purpose flour
- baking soda
- salt
- semi-sweet chocolate chips
Instructions:
- Preheat oven to 350°F (175°C) and grease a 9x5 inch loaf pan or line with parchment paper.
- In a large mixing bowl, mash the 3 large bananas with a fork until mostly liquid. Whisk in the melted butter, oil, dark brown sugar, egg, vanilla extract, and sour cream until the mixture is glossy.
- Sift the flour, baking soda, and salt directly into the wet ingredients. Use a spatula to gently fold the mixture until just combined and no white streaks remain.
- Gently fold in 3/4 cup of the chocolate chips. Pour the batter into the prepared loaf pan and sprinkle the remaining 1/4 cup of chocolate chips on top.
- Bake for 55–65 minutes. Test with a toothpick; it should come out with a few moist crumbs but no wet batter. Let cool before slicing.
