Ingredients:
- 1 lb lean ground turkey (93/7 blend)
- 2 tsp sesame oil
- 1 tbsp fresh ginger, minced
- 3 cloves garlic, minced
- 1/2 cup water chestnuts, finely diced
- 1/2 cup green onions
- 3 tbsp low-sodium soy sauce
- 1 tbsp rice vinegar
- 1 tbsp hoisin sauce
- 1 tsp chili garlic sauce
- 1/2 tsp fish sauce
- 2 heads butter lettuce
- 1 cup shredded carrots
- 1/2 English cucumber, julienned
- 1/4 cup fresh cilantro
- 1 lime, cut into wedges
- 2 tbsp chopped peanuts
Instructions:
- Set a large cast-iron or stainless steel skillet over medium-high heat until the oil shimmers. Add the ground turkey in a single flat layer. Let it sit undisturbed for 2 minutes to allow a crust to form.
- Once browned, break the meat into small crumbles. Add the whites of the green onions, minced ginger, and garlic. Sauté for 2 minutes until fragrant.
- In a small bowl, whisk together the soy sauce, rice vinegar, hoisin sauce, chili garlic sauce, and fish sauce. Pour the glaze into the skillet.
- Add the diced water chestnuts and stir to coat. Simmer for 3 minutes until the sauce reduces and glazes the meat. Remove from heat and stir in the remaining green onion tops.
- Assemble the bowls by layering butter lettuce leaves with shredded carrots and julienned cucumber. Top with the warm turkey mixture, green onion greens, cilantro, chopped peanuts, and a squeeze of fresh lime.
