Ingredients:

  • 1 lb lean ground turkey (93/7 blend)
  • 2 tsp sesame oil
  • 1 tbsp fresh ginger, minced
  • 3 cloves garlic, minced
  • 1/2 cup water chestnuts, finely diced
  • 1/2 cup green onions
  • 3 tbsp low-sodium soy sauce
  • 1 tbsp rice vinegar
  • 1 tbsp hoisin sauce
  • 1 tsp chili garlic sauce
  • 1/2 tsp fish sauce
  • 2 heads butter lettuce
  • 1 cup shredded carrots
  • 1/2 English cucumber, julienned
  • 1/4 cup fresh cilantro
  • 1 lime, cut into wedges
  • 2 tbsp chopped peanuts

Instructions:

  1. Set a large cast-iron or stainless steel skillet over medium-high heat until the oil shimmers. Add the ground turkey in a single flat layer. Let it sit undisturbed for 2 minutes to allow a crust to form.
  2. Once browned, break the meat into small crumbles. Add the whites of the green onions, minced ginger, and garlic. Sauté for 2 minutes until fragrant.
  3. In a small bowl, whisk together the soy sauce, rice vinegar, hoisin sauce, chili garlic sauce, and fish sauce. Pour the glaze into the skillet.
  4. Add the diced water chestnuts and stir to coat. Simmer for 3 minutes until the sauce reduces and glazes the meat. Remove from heat and stir in the remaining green onion tops.
  5. Assemble the bowls by layering butter lettuce leaves with shredded carrots and julienned cucumber. Top with the warm turkey mixture, green onion greens, cilantro, chopped peanuts, and a squeeze of fresh lime.
