Ingredients:

  • 2 cans (15 oz / 425g each) Cannellini beans, drained and rinsed
  • 1 cup (150g) Cherry tomatoes, quartered
  • ½ cup (75g) Red onion, finely diced
  • ½ cup (15g) Fresh Italian parsley, chopped
  • ¼ cup (20g) Fresh basil leaves, chiffonade
  • 3 tbsp (45ml) Extra virgin olive oil
  • 2 tbsp (30ml) Freshly squeezed lemon juice
  • 1 clove (5g) Garlic, minced or pressed
  • ½ tsp (3g) Sea salt
  • ¼ tsp (1g) Cracked black pepper

Instructions:

  1. Prep the vegetables. Dice the red onion and quarter the cherry tomatoes. Chop the parsley and basil into small ribbons.
  2. Combine the base. Place the chopped onion, tomatoes, parsley, and basil into a large mixing bowl along with the rinsed cannellini beans.
  3. Mix the dressing. Combine the olive oil, lemon juice, minced garlic, salt, and pepper in a small jar.
  4. Emulsify the sauce. Shake the jar vigorously until the mixture looks opaque and slightly thickened. Note: This prevents the oil from separating during the meal.
  5. Coat the beans. Pour the dressing over the bean mixture.
  6. Fold gently. Use a spatula or large spoon to stir the ingredients until the beans are glistening and evenly coated.
  7. Rest the salad. Let it sit for 5 minutes at room temperature.
  8. Final taste. Give it one last stir and adjust the salt if needed before serving.
