  • 4 cups yellow squash, sliced into ¼-inch rounds

  • ½ cup chopped onion

  • 2 large eggs

  • ½ teaspoon garlic powder

  • ½ teaspoon salt

  • 1 cup crushed butter crackers (like Ritz)

  • 2 tablespoons melted butter


Instructions

  • Preheat the oven
    Preheat your oven to 350°F (175°C) and lightly grease a 9×9-inch baking dish.

  • Cook the squash and onions
    Heat olive oil or butter in a skillet over medium heat. Add the sliced squash and chopped onions. Sauté for about 10–12 minutes until the squash is soft and most of the moisture has evaporated. Let cool slightly.

  • Prepare the egg mixture
    In a large bowl, whisk together eggs, sour cream, cheddar cheese, Parmesan, garlic powder, salt, and pepper.

  • Combine squash with egg mixture
    Fold the cooked squash and onions into the egg mixture. Stir gently to combine everything evenly.

  • Assemble the casserole
    Pour the squash mixture into the greased baking dish and spread it out evenly.

  • Add topping
    Mix the crushed crackers with melted butter and sprinkle over the top of the casserole.

Notes
