Ingredients:

  • 1 cup (190g) long-grain white rice
  • 2 cups (475ml) water
  • 1 large cinnamon stick
  • 1 strip lime or orange zest
  • 1/4 tsp salt
  • 2 cups (475ml) whole milk
  • 1 can (12 oz) evaporated milk
  • 1 can (14 oz) sweetened condensed milk
  • 1 tsp vanilla extract
  • 1/2 cup (75g) raisins
  • 1/2 tsp ground cinnamon for dusting

Instructions:

  1. Place the rice, 2 cups of water, the cinnamon stick, salt, and citrus peel in a heavy-bottomed saucepan.
  2. Bring the mixture to a boil, then reduce to a low simmer. Cover and cook for 15 minutes, or until the water is absorbed and the rice is tender.
  3. Remove the citrus peel. Stir in the whole milk and evaporated milk. Increase heat slightly to a medium-low simmer.
  4. Cook uncovered for 15–20 minutes, stirring frequently with a wooden spoon, ensuring you scrape the bottom to prevent caramelization.
  5. Stir in the sweetened condensed milk and vanilla extract. Continue to simmer for another 10–15 minutes until it reaches the consistency of thick heavy cream.
  6. Remove from heat and stir in the raisins. Dust with ground cinnamon before serving warm or chilled.
