Ingredients:
- 1 cup (190g) long-grain white rice
- 2 cups (475ml) water
- 1 large cinnamon stick
- 1 strip lime or orange zest
- 1/4 tsp salt
- 2 cups (475ml) whole milk
- 1 can (12 oz) evaporated milk
- 1 can (14 oz) sweetened condensed milk
- 1 tsp vanilla extract
- 1/2 cup (75g) raisins
- 1/2 tsp ground cinnamon for dusting
Instructions:
- Place the rice, 2 cups of water, the cinnamon stick, salt, and citrus peel in a heavy-bottomed saucepan.
- Bring the mixture to a boil, then reduce to a low simmer. Cover and cook for 15 minutes, or until the water is absorbed and the rice is tender.
- Remove the citrus peel. Stir in the whole milk and evaporated milk. Increase heat slightly to a medium-low simmer.
- Cook uncovered for 15–20 minutes, stirring frequently with a wooden spoon, ensuring you scrape the bottom to prevent caramelization.
- Stir in the sweetened condensed milk and vanilla extract. Continue to simmer for another 10–15 minutes until it reaches the consistency of thick heavy cream.
- Remove from heat and stir in the raisins. Dust with ground cinnamon before serving warm or chilled.
