Ingredients:

  • 2 cups heavy cream
  • 1 cup whole milk
  • 3/4 cup granulated sugar
  • 1 tbsp pure vanilla extract
  • 1/4 tsp fine sea salt

Instructions:

  1. Pour the whole milk, granulated sugar, and salt into a large bowl.
  2. Whisk the mixture vigorously until the sugar crystals disappear and the liquid looks smooth.
  3. Stir in the heavy cream and vanilla extract. Note: Don't over whisk here or you'll create too many bubbles.
  4. Cover the bowl and refrigerate for 2 hours. Ensure the base is ice cold before proceeding.
  5. Pour the chilled liquid into your frozen ice cream maker bowl.
  6. Churn the mix for 20 minutes until it reaches a soft serve consistency.
  7. For the manual method, pour the base into a shallow container and freeze.
  8. Whisk the edges toward the center every 30 minutes for 3 hours. Note: This mimics the aeration of a machine.
  9. Transfer the mix to an airtight tub.
  10. Press parchment paper onto the surface and freeze 4 hours until firm and scoopable.
