Ingredients:
- 3 cups (375g) all-purpose flour
- 1 cup (240ml) warm water
- 2 ¼ tsp (7g) instant yeast
- 1 tsp (6g) salt
- 1 tbsp (12g) olive oil
- 1 tsp (5g) honey
Instructions:
- In a large bowl, whisk together the flour, instant yeast, and salt.
- Add the warm water, olive oil, and honey. Stir with a wooden spoon until a shaggy dough forms.
- Turn the dough onto a floured surface and knead for 3-5 minutes until smooth.
- Place dough in a greased bowl, cover with a damp cloth, and let rise in a warm spot for 60 minutes or until doubled in size.
- Punch down the risen dough and divide it into 8 equal portions.
- Roll each piece into a ball, then use a rolling pin to flatten them into 6-inch circles about ¼ inch thick.
- Let the rolled circles rest for 10 minutes to relax the gluten.
- Set a cast iron skillet over medium-high heat until a drop of water sizzles and dances immediately.
- Lay one pita in the dry pan. Cook for 30 seconds until tiny bubbles form.
- Flip the pita and cook for 1-2 minutes until golden-brown spots appear.
- Flip again; the pita should inflate. Gently press the edges to encourage the steam to push the center up.
- Remove from heat and immediately wrap in a clean kitchen towel to steam-soften the crust.
