Ingredients:

  • 3 cups (375g) all-purpose flour
  • 1 cup (240ml) warm water
  • 2 ¼ tsp (7g) instant yeast
  • 1 tsp (6g) salt
  • 1 tbsp (12g) olive oil
  • 1 tsp (5g) honey

Instructions:

  1. In a large bowl, whisk together the flour, instant yeast, and salt.
  2. Add the warm water, olive oil, and honey. Stir with a wooden spoon until a shaggy dough forms.
  3. Turn the dough onto a floured surface and knead for 3-5 minutes until smooth.
  4. Place dough in a greased bowl, cover with a damp cloth, and let rise in a warm spot for 60 minutes or until doubled in size.
  5. Punch down the risen dough and divide it into 8 equal portions.
  6. Roll each piece into a ball, then use a rolling pin to flatten them into 6-inch circles about ¼ inch thick.
  7. Let the rolled circles rest for 10 minutes to relax the gluten.
  8. Set a cast iron skillet over medium-high heat until a drop of water sizzles and dances immediately.
  9. Lay one pita in the dry pan. Cook for 30 seconds until tiny bubbles form.
  10. Flip the pita and cook for 1-2 minutes until golden-brown spots appear.
  11. Flip again; the pita should inflate. Gently press the edges to encourage the steam to push the center up.
  12. Remove from heat and immediately wrap in a clean kitchen towel to steam-soften the crust.
