Ingredients:

  • 3 cups (375g) all-purpose flour
  • 1 tbsp (12g) granulated sugar
  • 1 tsp (6g) salt
  • 2 ¼ tsp (7g) active dry yeast
  • ½ tsp (3g) baking soda
  • 1 ½ cups (355ml) warm water
  • 2 tbsp (28g) melted unsalted butter

Instructions:

  1. In a large mixing bowl, whisk together the flour, sugar, salt, yeast, and baking soda.
  2. Pour in the warm water and melted butter. Stir with a spatula just until the flour is moistened; the dough should be sticky and gloopy.
  3. Cover the bowl with a clean kitchen towel or plastic wrap and let the dough rest in a warm, draft-free spot for 30 to 45 minutes until it visibly expands and shows small bubbles on the surface.
  4. Preheat the oven to 375°F (190°C). Grease two 8x4 inch loaf pans or line them with parchment paper.
  5. Gently scoop the batter into the pans, dividing it evenly between the two.
  6. Bake for 20–25 minutes until the tops are mahogany-colored and the loaves sound hollow when tapped.
  7. Let the loaves cool in the pans for 5 minutes before transferring them to a wire rack to cool completely before slicing.
