Ingredients:
- 4 tbsp (57g) unsalted butter, melted
- 2 tbsp (30ml) extra virgin olive oil
- 4 cloves (12g) garlic, minced finely
- 1 tbsp (15ml) fresh lemon juice
- 1/2 tsp (2.5g) kosher salt
- 1/4 tsp (1.25g) cracked black pepper
- 1 tsp (2g) dried oregano
- 2 (6 oz / 170g) white fish fillets (Cod, Halibut, or Tilapia)
- 1 lemon, thinly sliced into rounds
- 2 tbsp (8g) fresh parsley, chopped
- 1 tbsp (15ml) melted butter
Instructions:
- In a small bowl, whisk together the 4 tbsp melted butter, olive oil, minced garlic, lemon juice, salt, pepper, and oregano until fully emulsified.
- Pat the fish fillets completely dry with paper towels and place them on a parchment-lined baking sheet.
- Using a brush, coat the top and sides of each fillet generously with the garlic butter mixture and top each with two lemon slices.
- Preheat the oven to 425°F (218°C). Grease the pan with 1 tbsp melted butter and bake the fillets for 12–15 minutes until the internal temperature reaches 145°F (63°C).
- Remove from the oven, sprinkle immediately with fresh chopped parsley, and let the fish rest for 2 minutes before serving.
