Ingredients:

  • 1/2 cup extra-virgin olive oil
  • 3 tbsp red wine vinegar
  • 1 tbsp fresh lemon juice
  • 1 clove garlic, finely minced
  • 1 tsp dried oregano
  • 1 tsp Dijon mustard
  • 1/2 tsp sea salt
  • 1/4 tsp cracked black pepper

Instructions:

  1. Add the minced garlic, dried oregano, salt, pepper, and Dijon mustard to a glass mason jar or bowl. Stir well to ensure the salt dissolves and herbs are distributed.
  2. Pour in the red wine vinegar and lemon juice. Shake the jar vigorously or whisk rapidly for 30 seconds.
  3. Slowly stream in the olive oil while continuing to shake or whisk until the mixture transforms from translucent to an opaque, pale gold emulsion.
  4. Taste the dressing using a piece of cucumber or lettuce, adjusting salt or lemon juice to suit your preference.
