Ingredients:
- 1/2 cup extra-virgin olive oil
- 3 tbsp red wine vinegar
- 1 tbsp fresh lemon juice
- 1 clove garlic, finely minced
- 1 tsp dried oregano
- 1 tsp Dijon mustard
- 1/2 tsp sea salt
- 1/4 tsp cracked black pepper
Instructions:
- Add the minced garlic, dried oregano, salt, pepper, and Dijon mustard to a glass mason jar or bowl. Stir well to ensure the salt dissolves and herbs are distributed.
- Pour in the red wine vinegar and lemon juice. Shake the jar vigorously or whisk rapidly for 30 seconds.
- Slowly stream in the olive oil while continuing to shake or whisk until the mixture transforms from translucent to an opaque, pale gold emulsion.
- Taste the dressing using a piece of cucumber or lettuce, adjusting salt or lemon juice to suit your preference.
