Ingredients:
- 1.5 cups all-purpose flour
- 0.5 cup cold unsalted butter, cubed
- 0.25 tsp salt
- 4 tbsp ice water
- 1 cup unsalted butter, melted and cooled
- 1 cup granulated sugar
- 2 large eggs, room temperature
- 2 tbsp Kentucky bourbon
- 1 tsp vanilla extract
- 1 cup chopped walnuts
- 2 cups semi-sweet chocolate chips
Instructions:
- Roll out the chilled dough and fit it into a 9-inch pie plate. Line the bottom with parchment paper and fill with pie weights.
- Bake the crust at 375°F (190°C) for 10–12 minutes. Remove the weights and bake for an additional 5 minutes until the base is pale gold.
- In a large mixing bowl, whisk the melted butter and granulated sugar until smooth.
- Beat in the eggs one at a time, then stir in the bourbon and vanilla extract.
- Fold in the toasted walnuts and semi-sweet chocolate chips using a spatula until evenly suspended.
- Pour the filling into the pre-baked crust.
- Bake at 350°F (175°C) for 35–40 minutes until the edges are set and deep mahogany, but the center has a slight, slow jiggle.
- Remove from the oven and cool completely on a wire rack for at least 2 hours to allow the filling to set.
