Ingredients:

  • 1 tbsp olive oil
  • 1 tsp kosher salt
  • 1/2 tsp cracked black pepper
  • 1 tsp paprika
  • 1/2 tsp garlic powder
  • 2 (6 oz) white fish fillets
  • 1 tbsp melted butter
  • 1 whole lemon

Instructions:

  1. Pat the fish fillets aggressively with paper towels until the surface is completely dry. Use a sharp knife to make two shallow slits (about 1/4 inch deep) across the thickest part of each fillet.
  2. In a small bowl, whisk together the olive oil, salt, pepper, paprika, and garlic powder into a thick paste.
  3. Brush a thin, even layer of the seasoning paste over both sides of the fish fillets.
  4. Preheat the grill to high (approximately 400°F / 200°C) and brush the grates with melted butter.
  5. Place fillets carefully on the heat. Sear for 3-4 minutes without moving them until the fish naturally releases from the grate.
  6. Flip the fillets gently with a fish spatula and cook for an additional 2-3 minutes until the interior is opaque and reaches the desired temperature.
  7. Serve immediately with lemon wedges.
