Ingredients:
- 2 cups (250g) all-purpose flour
- 1 tsp (5g) baking soda
- 1 tsp (5g) baking powder
- 1 tsp (2g) salt
- 2 tsp (4g) ground cinnamon
- 1 tsp (2g) ground nutmeg
- ½ tsp (1g) ground ginger
- ¾ cup (170g) unsalted butter, softened
- 1 ½ cups (300g) granulated sugar
- 2 large eggs, room temperature
- 1 tsp (5ml) vanilla extract
- 1 cup (240g) mashed sweet potato (smooth puree)
- ½ cup (120ml) buttermilk, room temperature
- 8 oz (225g) full-fat cream cheese, softened
- ½ cup (115g) unsalted butter, softened
- 3 cups (360g) powdered sugar
- 1 tsp (5ml) vanilla extract
- 1 pinch (0.5g) salt
Instructions:
- Preheat your oven to 350°F (175°C). Grease your pan with butter and dust with flour, or line the bottom with parchment paper.
- In a medium bowl, whisk together the flour, baking soda, baking powder, salt, cinnamon, nutmeg, and ginger until no clumps remain.
- In a large bowl, beat the softened butter and granulated sugar on medium-high until the mixture looks pale and fluffy (about 3 minutes).
- Add eggs one at a time, beating well after each addition. Stir in the vanilla extract.
- Mix in the mashed sweet potato until just combined.
- Alternately add the dry ingredients and the buttermilk to the wet mixture, starting and ending with the flour. Mix on low speed until the batter is smooth and mahogany-colored—do not overmix.
- Pour the batter into the prepared pan and smooth the top with a spatula.
- Bake for 28–35 minutes. The cake is done when a toothpick inserted into the center comes out clean or with just a few moist crumbs.
- Let the cake cool in the pan for 10 minutes, then transfer to a wire rack to cool completely.
- Beat the cream cheese and butter together until velvety. Gradually add powdered sugar, vanilla, and salt. Beat on high for 2 minutes until light and airy.
- Spread the frosting generously over the cooled cake.
